6 russet potatoes, peeled and cubed
6 slices of bacon, chopped
1 small onion, finely diced
3 cloves garlic, minced
4 cups chicken broth
2 cups milk (whole or 2%)
1 cup heavy cream
1 cup sharp cheddar cheese, shredded
1/2 cup sour cream
3 tbsp butter
2 tbsp flour
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional, for extra warmth)
Extra shredded cheddar cheese
Chopped green onions
Crispy bacon bits
Dollop of sour cream
Croutons or toasted bread (optional, for extra crunch)
In a large heavy-bottomed pot or Dutch oven, cook the chopped bacon over medium heat until crispy.
Remove the bacon with a slotted spoon and place it on a paper towel-lined plate. Leave about 2 tablespoons of bacon grease in the pot for extra flavor.
